Well after not eating any food that I haven't prepared myself (or Lawry of course!) apart from the odd chinese takeaway in almost 2 years, the Indian meal either gave me food poisoning or MSG poisoning and caused me to be violently ill! Everyone had a great time and I hope Lainey enjoyed her birthday but unfortunately I was really poorly on Saturday and Sunday. It was a painful way to learn a lesson that home cooking really is best and not just from a weight loss point of view, lol!
Thort I'd share tonight's dinner recipe with you which is a Monday night favourite in this household - Cock-a-Leekie Soup. It's really simple to make and a great way to make a roast chicken stretch to a second dinner!
Simply remove all the skin from the leftover roast chicken from your Sunday dinner and place in a large plan of cold water. Bring to the boil and allow to simmer while you chop leeks (or onions if you have none) carrots ant potatoes. Once the water with the chicken in has boiled and simmered so all the lovely chicken flavouris in the water, get another big pan and strain the chicken through a sieve and collect the chicken stock in pan. Add the chopped veg, some thyme and seasoning and place back on the heat. When the chicken carcass has cooled, strip all the chicken off the bones and add to the soup.
(You'll find loads of lovely meat around the chicken thighs and the underneath of the bird which normally gets overlooked during a Sunday roast as everyone prefers the white breast meat - well they do in our house!)
To make the soup even more hearty, add a cup or two of yellow split peas for a truly comforting meal just like ya Ma used to make! Totally SYN FREE on Extra Easy too

For a Slimming World twist on a classic pud, make up a sachet of sugar-free jelly to just 3/4 of a pint in a bowl and add any 2 Muller Light yoghurts. Mix thoroughly and divide blanmange mixture into 4 glasses and place in fridge to set. I never tried this until recently because I hate sugar-free jelly but I find these puds really hit the spot when you're in the need for a sugar fix! Syns for sugar free jelly sachet is 1.5 syns and add any syns if you use a Muller that has any but I count 2 syns all in and cos the kids know they're my SW puds I usually manage to scoff the lot myself!!!
I've been keeping a close eye on my syns this week and have a weekly total of 82 spent out of the 105 allowance which I'm really proud of - although my body does feel deprived of red wine this week, lol but it should all be worth it when I weigh in tomorrow morning - I'll keep you informed! xxx
